When I was thinking about what kind of Valentine’s day dishes i should make for the blog i was having some trouble.

I didn’t just want to do the usual chocolate everything, so i started thinking about what things Marc loves, because it’s Valentine’s day, our first as husband and wife, and i wanted to make things he would love.

Marc loves rocky road, but i wanted to make it special not just the usual rocky road.

Homemade marshmallow are one of my favourite sweets. I don’t care much for supermarket marshmallows. But homemade?? Oh boy it’s like eating clouds of joy.

I also made turkish delight. another of Marc’s favourites and then i decided pistachios would be the perfect crunchy addition.

This rocky road is so delicious, packed with things Marc and I both love, the perfect treat for Valentine’s day or any day.

Make this to share with your husband, wife, partner, boyfriend, girlfriend, bff, work friends any one you want to share some valentines love with.

Makes: 16 pieces

Turkish delight

400g caster sugar 1 teaspoon cream of tartar 1 tablespoon powdered gelatin ¼ teaspoon rose essence 1 drop pink gel food colour

1 portion How Sweet Eats Vanilla Bean Marshmallow

80g pistachios 250g milk chocolate 250g dark chocolate Heart sprinkles

Place sugar, cream of tartar and 125 ml water in a saucepan over medium heat. Stir to dissolve sugar, then bring to the boil and cook for 15 minutes or until mixture reaches 125˚C on a sugar thermometer. Remove from heat.

Whisk gelatine with 80 ml boiling water until gelatine dissolves. Stir in 80ml water, rosewater and food colouring.

Strain gelatine mixture into sugar syrup and stir to combine. Pour into a greased loaf pan and refrigerate for 4 hours or until firm.

Rocky Road

Line a 21x31cm baking tray with baking paper, leave some to hang over the edges.

Turn out the Turkish delight and cut into 1 cm cubes.Cut the marshmallow into 2 cm cubes.

Place the chocolate into a heatproof bowl over a saucepan of simmering water. Stir until fully melted.Set the chocolate aside to cool to room temperature.

Add the pistachios, marshmallow and Turkish delight and stir until everything is fully coated. Tip into the lined tray and refrigerate for 2 hours or until set. Lift out of the pan and cut into squares. Enjoy!
