you guys!! i had to get involved with funfetti!! i love funfetti everything! if i thought i could get away with putting sprinkles on my toast i totally would! yes i am that girl and i’m proud of it! brownies are one of my favourite treats so i though where better to start than with funfetti brownies?

these brownies are moist (i hate that word to but i had to use it, i’m sorry) but not heavy. and of course they are dolled up with the addition of pretty colourful sprinkles!

i know some people think the funfetti trend needs to stop, i hope that not you, me i am all for funfetti. make everythingrainbow coloured and i will want to eat it. even if its rainbow coloured salad. if it looks fun it makes me happy even if it’s healthy.

don’t sprinkles just make you happy? seriously sprinkles cheer me up!! they are just so bright and cute!!

and i love all the different varieties, speaking of different varieties have you seen sweetapolita’s sprinkle shop?  i adore her mixes, they are unique and i want to use them on everything!! over the rainbow is my favourite and it comes in a 2.3kg quantity!!!

white chocolate funfetti brownies

Servings 16 brownies

Ingredients

  • 200 grams white chocolate melts
  • 120 grams butter
  • 3 eggs
  • 1/2 cup caster sugar
  • 1 & 1/2 cups plain flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sprinkles

Instructions

  1. preheat the oven to 180 degrees.  grease and line a 8 inch pan with baking paper.

  2. place butter and chocolate in a heatproof bowl over a pan of simmering water (ensure that the bowl doesn't touch the water), stir until smooth.  set aside to cool slightly.

  3. whisk the eggs and sugar until combined.  sift in flour and baking powder and stir to combine.   stir in the chocolate mixture then fold through the sprinkles.

  4. spoon into the prepared pan and bake for 20 minutes or until a skewer comes out with just a few crumbs attached.  cool completely in the pan, remove from pan and cut into squares to serve, enjoy!
