Sometimes simple breakfast is the best, don’t you think? It’s takes the pressure off from having to create a more time consuming Sunday brunch and opens up the possibility of a truly lazy Sunday morning. Something like this whipped feta & avocado toast is perfect for the laziest of Sunday’s.
You can make the whipped feta the day before or even a few days before, it keeps well in the fridge for up to a week. So on Sunday morning you can pop the toast on, make some coffee, spread the feta on the toast, top it with avocado, tomatoes salt and pepper and head back to bed.
That sounds like a perfect way to start a Sunday to me…
The whipped feta is super simple to make and can be used on so many things. It’s great in burritos 🙂
And you can adjust it to your taste!
For the toast I like a hearty bread like a sourdough or a rye loaf, use what you love!
Slather on a thick layer of whipped feta, top it with some avocado slices, cherry tomatoes, salt and lots of pepper and you have heaven in a bite! If you want a sweeter option the feta is great with jam as well, it’s that sweet and salty combo that I just can’t get enough of.

Whipped Feta & Avocado Toast
- 4 slices sourdough or rye
- whipped feta
- 1/2 avocado
- 6-8 cherry tomatoes
- salt & pepper
- 150 grams danish feta
- 1/4 cup greek yogurt
- 1 tespoon lemon juice
Toast the bread. Slather with whipped feta, top with slices of avocado, tomato and salt and pepper. Serve in bed and enjoy!
Place feta, yogurt and lemon juice in a food processor and blitz until completely smooth. Scoop into an airtight container and keep in the fridge. This will keep for a week.
