You guys, it is so cold in Tassie! I am looking forward to warm weather and this watermelon & feta salad when we get home!
I threw this together one day for lunch for Marc and I and we loved it so much I knew I had to share! This salad is fresh, crispy, sweet, salty and perfect for hot summer day lunches. It’s also a great side anytime of day, this would even be great with brunch. It’s amazing with grilled chicken!
I love salad with fruit in them, Marc is slowly coming around to them. How do you feel about salad with fruit?
I know it’s not everyone’s cup of tea. Oh speaking of tea we went to Bridestowe Lavender Estate yesterday and I brought the most divine Lavender Grey tea, it’s earl grey mixed with dried lavender, it’s magical. I also had their lavender ice cream, I can’t even explain how good it was. It was creamy and lush, with a subtle delicate flavour. Too good!
Today we are going to Christmas Hill Raspberry Farm, Ashgrove Cheese, Anvers House of Chocolates & Hellyers Road Distillery. I am besides myself excited about it! I knew Tasmania had incredible produce but my expectations were nothing, everything is better then I ever imagined.

Watermelon & Feta Salad
- 1 baby cos
- 240 g watermelon, cut into wedges
- 20 g alfalfa sprouts
- 1/2 avocado, sliced
- 50 g feta
- 10 g pepitas
- 1 tbsp olive oil
- 1 tbsp white balsamic vinegar
- 1 teas salt
- 1 teas pepper
Separate and wash the lettuce leaves. Place them on a large platter or two plates, place the watermelon over the lettuce and spread the alfalfa over the top.
Add the avocado slices, crumble over the feta and sprinkle over the pepitas. Drizzle over the oil and vinegar and lastly sprinkle with salt and pepper. Serve and enjoy!
