This is the perfect summery cocktail for your weekend BBQ’s before it starts getting cold.
When I think about cocktails for summer parties, I want them to be light refreshing and easy to make in batches.
This mojito ticks all the boxes. You can make the juice in advance and it gets better when you let it set, the flavours mellow. And then when you are ready to serve measure out some, add an equal amount of juice and top off with soda water.
It’s so easy your friends can help themselves!
This cocktail would also be perfect for a girls night and without the rum is a huge hit with kids!
And it’s pink! What’s not to love??
Watermelon is one of my favourite summer fruits, I always have it in my house during summer I love it straight from the fridge on hot days. My dogs even love it, they are so cute with it too they take big bites until they near the rind and the they nibble at it until they get all of it.
The basil in this gives a really different flavour to mint, I adore basil with watermelon. Watermelon is so sweet and the basil plays of that really well.

Watermelon & Basil Mojito
- 6 cups watermelon cut into chunks
- 30 basil leaves
- 1 & ½ limes, juiced
- 2 tablespoons cater sugar
- White rum
- Soda water
Place the watermelon and into a blend and blend until smooth.
Place the basil leaves and sugar into a jug and muddle together, this will bring out some of the oils in the basil. Add the lime juice and stir then pour all of it into the blender with the watermelon and blend well.
Pour juice into a jug or carafe.
When read to serve mix the juice as the pulp will separate.
In a glass add a handful of ice, 2 shots of white rum, and equal amount of the juice and top off with soda water.
Serve and enjoy!
