happy friday, let’s make cocktails!!! this week i made you a tequila pineapple zinger!

these cocktails are fresh and fruity and scream summer, which lets face it, while we are meant to be in the middle of winter here in brisbane you can’t tell. it’s still so warm and we are getting incredible pineapples at the moment. i hope wherever you are you can find good pineapple so you can make a big jug of this tequila pineapple zinger to share with your favourite people!

if you are not super into the taste of tequila don’t worry but a decent silver tequila and you will hardly taste in here with all the pineapple. this tequila pineapple zinger is barely sweetened with some agave syrup as the pineapple is so sweet you only need a little extra sweetness when making the syrup, and then when mixing the drink you cut the sweetness with some fresh lime juice and you have sweet perfection in the form of a cocktail. does life get better?

tequila pineapple zinger

Servings 4


  • 450 grams pineapple
  • 2 tablespoons agave syrup
  • 1 cup water
  • 2 limes, juiced
  • 1/2 cup tequila
  • ice
  • soda water


  1. take 200g of pineapple and dice it, place it in a saucepan with the agave and water and place over medium heat and cook until the pineapple starts t break down, 5-10 minutes. 

  2. remove from heat and blend using a stick blender. strain to remove any chunks pressing down on the pulp to extract as much syrup as possible and allow the syrup to cool fully.

  3. once the syrup has cooled, pour it into a 1.25 litre jug, thinly slice the remaining pineapple and add it to the jug, add the lime juice & tequila stair well to combine.

  4. add 2-3 big handfuls of ice and top up with soda water. pour into tall glasses garnish with more pineapple and enjoy!
