Ricotta Pancakes with Honey Syrup & Pistachios

Happy Sunday!! I love sundays, lazy starts, brunching with hubby spending time with our animals what’s not to love?? And with Easter next weekend it will feel like double sundays, long weekends bring me such happiness. More time spend with the people (& animals) that I love most. I wanted a special brunch for easter, something familiar but new so I came up with these ricotta pancakes with honey syrup & pistachios. They are AMAZING!!!!

Raspberry & Rosemary Cocktail

You guys it’s almost easter, can you believe it??? This year is absolutely racing past! I must admit though I am so so stoked for 2 long weekends! As my birthday is on ANZAC day which is a tuesday thats a public holiday so I took the monday off work as well 🙂 For the cocktail this week i was thinking of easter and I wanted to make you something light that would pair well with easter lunch or brunch or even just with chocolate. So I came up with these raspberry & rosemary cocktails.

Marc loves barbecue, he has a charcoal webber and makes the most amazing smoked meats like those beef short ribs^^ He coated them in a spicy rub and smoked them for 4 hours, you can see the smoke ring! They were tender and juicy and falling off the bone, so so good!!

Peach Cobbler

I love stone fruit, it always makes me think of my Pop. When I was little he used to pick fruit at local orchards and he would take me with him all the time, I must have eaten my weight in nectarines every week, I loved them! I still love stone fruit, nectarines, peaches, apricots, plums they are all amazing! When I was shopping on the weekend I found these huge peaches that smelt incredible! As soon as I saw them I thought of peach cobbler.
