rosè baked rhubarb with whipped thyme coconut cream

rhubarb is one of those vegetables that i just adore and wait incredibly impatiently for when it’s not in season. ever year i tell myself i will cook it and jar it but i never do, so i feel like i’m constantly waiting to see those gorgeous red stalks appear at the farmers market once more. i finally found some over the weekend and as soon as i got home i set about making rosè baked rhubarb.

oh my gosh you guys!!!!! i am so super excited! i won a competition!! when they called to tell me i actually thought they were joking, haha! so i won a weekend for 4 people on the gold coast. it includes return private transfers from our house, 4 pacific fair gift bags, a nights accommodation at the star, lunch for 4 and a $250 dinner voucher for one of the restaurants at the star. i can still hardly believe it!! it’s for this weekend, we so needed this right now, we’ve been stressing about house stuff and a weekend away will be amazing.

hi friends and happy first day of winter! we had a super mild autumn here in Brisbane but yesterday was significantly colder, hopefully winter won’t be too bad.

i know, i know it’s Brisbane it doesn’t even get really cold. i get it trust me! i have liver here for 6 years, i moved from Armidale, which is in central NSW. it’s gets stupid cold there like minus 4 on a good morning cold. so i know it doesn’t REALLY get cold here, but i’ve acclimatised and it sure seems cold.
