Today we are headed to Tasmania for our holiday so I thought we’d kick off with a cocktail with all the holiday vibes! I made us this fun spiced pineapple mule. Even though we aren’t going to a beach I still want all of these. Round up your girls and make a round of these bad boys for everyone and pretend you are on an island and chill. Spiced Pineapple Mule | rachaelsfoodielife.com If you want to make your pineapple your glass like I did, i recommend getting a pineapple corer. Cut your pineapple and pull it out, then remove the core and your all set! Just keep in mind your pineapple will be bigger than a standard glass, so mine fit two servings. It’s a great way to serve it for parties and it’s a huge hit as well as being super simple to make. I love low maintenance cocktails that can serve a crowd. For me that’s key to a great party! Spiced Pineapple Mule

Servings 2

Ingredients

  • 16 mint leaves
  • 180 ml spiced rum
  • 240 ml fresh pineapple juice
  • 250 ml ginger beer
  • crushed ice

Instructions

  1. 3/4 fill a cocktail shaker with ice and add the mint and rum, place the lid on and shake until very cold.

  2. Pour the rum between into 2 tall glasses, fill each glass with crushed ice and add the pineapple juice and ginger beer. Stir with a cocktail spoon add a straw and a garnish of mint leaves, serve and enjoy!
