you guys need to make these burgers! you might have seen them on my insta stories last week? they are little flavour bombs! i mean we are talking layer upon layer of flavour!

we’ve got the brioche slider bun, chilli bacon jam, spinach, aged cheddar, the burger pattie and cherry bbq sauce! ugh! i can’t even deal with the fact that i don’e have these in front of me right now!

because these are sliders you can eat way more right? they are small so that means less calories? that’s how it works yeah? because i could eat like 8 of these in one go! marc took one bite and said is there more of these because that’s not enough.

i believe the key to a really great burger or slider is a juicy pattie, don’t over cook it because it will dry out it’s gotta be juicy then load up on flavour!

i also made you these oven baked fries ^^^ i can’t be bothered with messing about to deep fry them so i have been working on perfecting oven baked fries so i could share them with you and i finally found the best way to get them soft on the inside and crunchy on the outside! and they are so simple!

smoked honey mustard sliders

Servings 4

Ingredients

  • 500 grams beef mince
  • 1 tablespoon blend smoked honey
  • 1 tablespoon seeded mustard
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablepsoon finely chopped fresh parsely
  • 1/2 teaspoon garlic powder
  • 8 brioche slider buns
  • 12 teaspoons bacon jam
  • baby spinach
  • 8 slices extra vintage cheddar

oven baked fries

  • 700 grams potatoes
  • 1 teaspoon salt
  • 2 tablespoons canola oil

cherry barbecue sauce

  • 3/4 cup tomato sauce
  • 2/3 cup sour cherry juice
  • 1/4 cup honey
  • 1/4 cup molasses
  • 3 garlic cloves, crushed
  • 2 tablepsoons apple cider vinegar
  • 2 tablespoons dijon mustard
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika

Instructions

make the burger patties

  1. place the mince, blend smoked honey, seeded mustard, salt, pepper, parsley and garlic powder in a bowl and mix until well combined, it's easiest to use your hands.  divide the mixture into 8 portions and shape into mini burger patties, place them on a plate and cover them and put them in the fridge while you start on the fries.

oven baked fries

  1. preheat the oven to 220 degrees

  2. peel the potatoes and cut them into into 1 cm slices. place them into a saucepan and cover with cold water and add the salt. place the saucepan over high heat and bring to the boil, boil for 5 minutes.

  3. drain the fries well and tip them back into the saucepan, pour in the oil and shake well to coat. carefully spread the fries out over 2 trays, take care not to overcrowd the trays. bake for 25-30 minutes.

make the sliders

  1. while your fries are baking, remove the patties from the fridge and place a fry pan over medium heat, once the pan is hot add the patties 4 at a time and cook for 4-6 minutes on each side. remove from the pan and set aside repeat with remaining patties.

  2. cut the brioche buns in half and once you patties are cooked toast the buns in the fry pan. leave the pan juices in there they will add extra flavour.

  3. build the sliders by placing a teaspoon and a half of bacon jam on the base of each bun, top with baby spinach, cheese then the patties. spread a teaspoon of cherry bbq sauce on the top half of the bun.

  4. remove the fries from the oven, you can add extra salt if you want and serve alongside the sliders, enjoy!

cherry bbq sauce

  1. place all ingredients into a medium saucepan and whisk well to combine. heat over medium heat until the sauce comes to a boil then reduce the heat to low and cook for 30-45 minutes, until it has thickened. stirring occasionally.

  2. remove from the heat and set aside to cool, as the sauce cools it will thicken further. store in a jar in the fridge this will keep for about a month.
