hi friends!! so monday, how did we get here again already? last week flashed past! monday nights dinners should be easy right? i agree! so i’m bringing you a super simple sausage tray bake, simply toss the vegetables with some oil and seasoning and tip everything into a tray and whack it in the oven. easy!
i love a one pot dinner and this is just as good but even easier, you can throw this sausage tray baked into the oven, pour yourself a cocktail and relax for 45-60 minutes while the oven does all the work for you. can i get a hell yes to easy monday night dinners?
i added a squeeze of lemon once i served this up and it really made it! when you make this please don’t forget the lemon it really elevates this simple dinner.
sausage tray bake
- 300 grams potatoes
- 300 grams sweet potatoes
- 2 red onions
- 1 red capsicum
- 3 garlic cloves
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 beef sausages
- 1 cup beef stock
preheat the oven to 180 degrees
peeled and chop the potatoes and sweet potato into 3cm chunks and place into a large bowl.
peel the onion and cut into wedges and cut the capsicum into large chunks and add to the bowl.
crush the garlic into the bowl add the olive oil, salt and pepper and mix well to ensure all the vegetables are coated.
tip all the vegetables into an oiled tray. place the sausages on top of the vegetables and pour over the beef stock
place into the oven and allow to cook for 45-60 minutes or until the sausages are cooked and the potatoes are soft. serve, squeeze over some fresh lemon juice and enjoy!
