So initially I had been planning on sharing two valentine’s cocktails with you, one that I love (this raspberry old fashioned from last week) and a cocktail Marc loves.
But then I thought what if you don’t drink, or you want to share some love with your children or you just want something decadent that doesn’t have alcohol in it?
Well friends you have come to the right place!
I made you this roasted strawberry balsamic milkshake!
Now I need to be completely honest, I love the idea of this shake as soon as I thought of it but I knew if I just put fresh strawberries in the flavour wouldn’t be there and I have never roasted strawberries before so I took a gamble based on my knowledge that roasted fruits intensifies their flavour and sweetness and it worked beautifully!
There is no need to add any strawberry syrup or artificial flavours this shake gets all the flavour it needs from the roasted strawberries.
Before roasting them I tossed them in a little sugar and some caramelised strawberry balsamic, if you can’t find strawberry balsamic regular caramelised balsamic works as well the balsamic amps up the flavour of the strawberry and adds an extra note to this shake that really balances it.
I have never really enjoyed strawberry milkshakes, you know the ones from a corner store where they use that iridescent pink syrup that tastes nothing like strawberries so I made this shake with Marc in mind, but I loved it!
It tastes like real strawberries and summer. Strawberries always remind me of summer, when I was young my cousins worked on a strawberry farm in the summer so we always had lots of strawberries during summer.

Roasted Balsamic Strawberry Milkshakes
- 250g strawberries, washed and hulled
- 2 teaspoons strawberry balsamic vinegar
- 40g caster sugar
- 6 scoops vanilla ice-cream
- 600ml milk
Pre-heat the oven to 180 degrees.
Place the strawberries in a bowl with the vinegar and sugar, mix well and set aside for 10 minutes. Place strawberries tip up on a baking tray with all liquid and roast for 10 minutes.
Remove from oven and cool fully.
Place strawberries and all liquid in a blender with ice cream and milk, blend until smooth. Divide between 2 glasses and enjoy!!
