Let talk about this red berry eton mess for a hot second!
It’s got everything you could want in a dessert. Creamy, crunchy, fruity, sweet, cold. Just delish!
Oh! And it’s so easy to make. Perfect for when you want something special just for you or when you are entertaining and need an easy dessert for a group of friends.
The key with this dessert is to assemble it right before you serve it so that the meringue stays crunchy.
You can have the cream whipped in advance if you are making this for friends so that you just need to slice up some strawberries to assemble and you can have 6 of these assembled in under 10 minutes!
Have you ever had eton mess before? Think of pavlova, but more cream and stacked in a glass.
These are so adaptable to whatever fruit you have on hand. If berries aren’t in season no problem, they are great with kiwi fruit and passionfruit, or even with mango in summer. Make these with what ever fruit is in season at the time. They are also stunning with stone fruit like nectarines with a blueberry sauce.

Red Berry Eton Mess
- 1 cup thickened cream
- 1 teaspoon vanilla bean paste
- 6 teaspoons raspberry puree
- 8 strawberries, sliced
- 12 meringue kisses
Whip the cream with the vanilla bean paste until soft peaks form.
Build the eton mess in serving glasses or bowls. Start with cream, then puree, 2 meringue kisses then some sliced strawberries. Keep going in this order until you have reached the size you desire. Serve and enjoy!
You could make mini ones for kids or as dessert bites for a cocktail party.
