Raspberry Meringue French Toast is my idea of the absolute perfect Valentine’s Day breakfast. It’s just so good!!

I starts with a base of sourdough french toast, then it’s topped with a quick raspberry compote then piled high with meringue and blow torched. You may think it would be super sweet but the raspberry compote adds a tartness and brings balance to this breakfast.

I could continue gushing over how good this french toast is, but instead I am going to tell you about my first Valentine’s Day with Marc.

But seriously make this french toast, it’s so amazingly good! Even Marc loved it and he is not a huge fan of raspberries.

But back to our first Valentine’s Day, we had been dating for almost 6 months and I think we both felt some pressure to do something but we were in that place where the relationship was still really new but getting serious fast, you know that stage where you second guess yourself but think everything is perfect and then wonder if something is wrong… or is that just me?

Marc asked where I wanted to go for dinner and there is this fantastic italian restaurant Vapino that I love, they make all there pizza and pasta fresh on site everyday and they have a herb room! You can go in there and pick any herbs you want and add them fresh to your meal!!

So we went to Vapiano…

We forgot to make a booking and it was crazy busy, so we waited for almost half an hour for a table, we shared a pizza and pasta.

Then we went to Timezone and played games for about 3 hours collected up all the tickets we had one and got a rainbow slinky.

I loved every second of it. It wasn’t over the top, we had great food and so much fun together. It is still one of my favourite dates we’ve had, simple and so us. This year for our first Valentine’s since we have been married we are going back to Vapiano’s and I cannot wait, we aren’t going on Valentine’s Day as Marc will be away so we are going the weekend after.

Raspberry Meringue French Toast

Serves: 2


  • 1 cup frozen raspberries
  • 1/2 an orange, juiced
  • 1 tablespoon caster sugar
  • 1 teaspoon cornflour
  • 2 eggs, separated
  • 1/2 cup caster sugar
  • 1 whole egg
  • 1/3 cup milk
  • 1/2 orange, juiced
  • 1 teaspoon vanilla bean paste
  • 4 slices sourdough bread



Place the raspberries, juice of first half orange and caster sugar in a small saucepan and cook over medium heat until raspberries have broken down, about 5 minutes. Mix the cornflour with 2 teaspoons water and add to the raspberries, cook a further 2-3 or until thickened slightly. Remove from heat and set aside.

Place the 2 egg yolks, whole egg, milk, remaining orange juice and vanilla bean paste in a bowl and mix well to combine. Pour into a shallow container or dish and add the bread slices, press down to encourage the bread to soak up the mixture, flip and press again. Set aside.

Place the egg whites in a medium bowl and whisk with a electric mixer until peaks form, slowly start to add the 1/2 cup of caster sugar 1 tablespoon at a time, ensuring the sugar is fully dissolved before adding more. Continue in this way until all sugar has been added. Set aside.

Heat a frypan over medium heat and add 1 tablespoon canola oil. Add the bread 2 slices at a time cook for 2-3 minutes or until golden then flip and cook a further 2-3 minutes. Place onto a plate and repeat with remaining 2 slices.

Pour half of the raspberry mix over each plate of french toast, pile on half of the meringue and using a blow torch carefully torch the meringue.

Serve with orange juice, coffee or bellinis and enjoy with your loved one! xo
