do you love pizza? why would i even ask that who doesn’t love pizza? we love pizza and since we have started making our own that love has only grown. if you haven’t made your own pizza from scratch base and all you are missing out! this potato & pancetta pizza is really simple with minimal ingredients a great starting place if you haven’t made your own pizza before or if you are looking for a simple delicious pizza.
have you ever made pizza dough from scratch? i hope so, making your own pizza dough (or bread) is a therapeutic thing. the kneading and seeing it come to life under your hands. it’s like magic, you start with simple ingredients – flour, yeast, salt, water, oil & honey and you create a beautiful pliable yielding dough. this dough bakes up to be a soft deep dish like base.
instead of sauce i used a thyme and garlic butter, so simple and elegant. the thinly sliced potatoes are a mixture of soft and crispy. and the shaved pancetta turns golden, crisp and crunchy a beautiful contrast to the soft fluffy dough. i topped it off with rocket tossed with a little lemon juice and oil this brings the perfect freshness to this pizza.
this pizza would be great addition to a pizza night, and italian themed dinner full of pizza, pasta and fresh salads, or for a simple dinner with your husband accompanied by a bottle of wine.

potato & pancetta pizza
- 2 cups plain flour
- 8 grams dry yeast
- 1/2 teaspoon salt
- 1 tablespoon honey
- 2 tablespoons olive oil
- 3/4 cups olive oil
- 1 handful polenta
- 40 grams butter, melted
- 2 cloves garlic, crushed
- 2 teaspoons chopped thyme leaves
- 120 grams potato, sliced
- 30 grams pancetta
- 3/4 cup grated cheese
- 30 grams rocket
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
combine the dry ingredient in a large bowl, pour in the oil, honey and water.
using your hands mix together to a soft dough, then turn onto a floured surface and knead until soft and pliable.
return the dough to the bowl and cover with cling wrap and leave in a warm place for 30 minutes to an hour. the dough should double in size.
once the dough has risen knock it back by punching down in the middle. remove the dough from the bowl and knead gently for 1 minute.
spray your pizza tray with canola oil and sprinkle over a handful of polenta, this adds an extra crustiness to the base of your pizza. roll or stretch out the pizza dough to fit your tray
to make the pizza
preheat the oven to 200 degrees
combine the melted butter with garlic & thyme, mix well then brush 3/4 of the mix over the pizza base. sprinkle over the cheese
arrange the potato slices over the base, it's easiest to work from the outside in. brush the remaining butter over the potatoes.
place into the oven and bake for 15 minutes.
remove from the oven and drape over the pancetta slices. return the pizza to the oven for 10 minutes.
remove from oven and slide the pizza off the tray, allow to cool for a minute while you toss the rocket in a bowl with the lemon juice and oil.
cut the pizza and place a small handful of rocket on each slice. serve and enjoy!
