i am new to loving iced tea and while i was doing the whole30 i was craving iced tea so a decided to embark on creating a sugar free version and loved it so much i had to share it with you!! so here is my sugar free pomegranate & mint iced tea

i mean seriously guys just look at that colour!^^ who doesn’t want to drink that? it’s light and refreshing and a little bit tart and perfect for a warm afternoon. you could add some honey if you want this to be sweeter and honestly if i wasn’t doing whole30 when i made this i would have added a couple of tablespoons of honey

i am a bit obsessed with lemon and lime so i added some fresh squeezed lime to these when i served them (the limes are from my Mum, they are a kinda yellow but have amazing flavour and are so juicy!) this is definitely optional but i loved the zesty kick it adds!

this is a great cocktail hour option for those doing whole30, or is your pregnant or if you just want a break from alcohol. as they are sugar free they are healthy, right? i mean they have pomegranate and mint so they must be healthy!

pomegranate & mint iced tea

Servings 1 litre

Ingredients

  • 2 tablespoons t2 vanilla slice tea
  • 1/2 cup mint leaves
  • 1 pomegranate
  • 30 mint leaves

Instructions

  1. blitz 1/2 cup of the pomegranate seeds in a food processor, place into a jug with the tea and 1/2 cup of mint leaves then pour over 1 litre of boiling water. set aside to steep for 30 minutes

  2. once the mix has steeped for 30 minutes strain into a serving jug, add the mint leaves and remaining pomegranate seeds.

  3. place in the fridge 4 hours or overnight until really cold, serve in glasses loaded with ice and lime wedges enjoy!
