This dish is a new favourite of ours.

It’s simple flavours, easy to cook and that Chili, Coriander and Lemongrass sauce adds a huge flavour hit. It’s fresh and zesty and packed with flavour, it really lifts this dish.

This is a dish that you can prepare in just over 30 minutes. It’s simple enough for a weeknight dinner and impressive enough for a dinner party.

I love the fresh flavours and the lightly scented poached chicken, which is cooked in coconut milk flavoured with lime juice and lemongrass.

The brocolini and snow peas are steamed and still crunchy, Marc used to hate crunchy brocoli but i’ve made it often enough that he now enjoys it 🙂

I have to talk to you about that sauce ^^

It is incredible!! It’s made with fresh chili, coriander and lemongrass which is blitzed in a food processor then lime juice and seasame oil is added. It makes a fresh, zesty, punchy sauce, the chili adds flavour without making the sauce hot. SO GOOD!

Poached Chicken, Brocolini, Snow Peas and Chili, Coriander & Lemongrass Sauce

Serves: 4

Ingredients

Chili, Coriander & Lemongrass Sauce

  • 1 red chili, seeds removed
  • 1/2 bunch coriander
  • 1/2 stick lemongrass
  • 1/2 lime, juiced
  • 1/2 teaspoon seasame oil
  • 1/2 teaspoon salt

Poched Chicken

  • 400ml cocnut milk
  • 400ml water
  • remaining 1/2 lemongrass cut in half
  • 1/2 lime
  • 1/2 teaspoon salt
  • 2 chicken breasts
  • bunch brocolini, cut in half
  • 140g snow peas, trimmed
  • brown rice to serve

Method

 

Place the chili, coriander and lemongrass in a food processor and blitz until finely chopped. Add the lime juice and seasame oil and blitz again. Scoop into a bowl and set aside.

Pour the cocnut milk in a large saucepan, add the water and lemongrass. Squeeze the lime juice in the saucepan and add the lime as well, bring to a boil add the chicken breast and turn the heat down to medium and cook the chicken for 20 minutes or until cooked.

Place the brocolini and snow peas into a steamer and cook for 5 minutes.

To serve sppon a bed of brown rice onto each plate, slice the chicken breast and divide between the plates add the brocolini and snow peas, take to the table with the bowl of sauce and let everyone help themselves to sauce. Enjoy!
