Happy Easter!!! I hope you are enjoying the long weekend and have tonnes of chocolatey goodies!! I have eaten more than my fair share of chocolate this weekend and I am in need of something healthier. So I want to talk you about oats. But not just any oats these are made with homemade pistachio milk!! Can I just stop here for a second and say that pistachio milk oats are THE BEST oats I have ever eaten, ever!

They are creamy and packed with pistachio flavour. Now don’t worry about making pistachio milk it’s super easy. Just soak the nuts overnight, drain, rinse, blend with water and strain. I’ve never made nut milk prior to now. And I am sold I will never buy almond milk, or any other nut milk from a store again. And making your own gives so many more options than what you see in stores. All nut milks are made with the same ratio of nuts and water. So if pistachios arent you jam try different nuts, maybe cashew or pecan. Oh the possibilities!

I would say I have a problem, but it’s a healthy breakfast and whenever I have oats for breakfast I have a really good day. So I am just going to keep eating them and now that I plan to make my own nut milks I will have so much more variety.

Also quick tip, usually when straining your nut mik recipes suggest using a nut milk bag or cheesecloth. While the bags are great they are not always easy to find and I was to impatient to order online so I used a mens hankercheif, a brand new one. They work exactly the same as cheesecloth but you can wash them and reuse them. I actually brought a pack on 13 specfically for kitchen use.

Pistachio Milk Oats

Servings 1


Pistachio Milk

  • 1 cup pistachios
  • 3 cups water

Pistachio Milk Oats

  • 1/2 cup oats
  • 1 cup pistachio milk
  • 1/4 teaspoon salt
  • 2 teaspoons honey
  • 4 strawberries
  • 1 banana


Pistachio Milk

  1. Place the pistachios in a container and cover with water. Place in the fridge to soak overnight.

  2. Drain the pistachios and rinse them, tip them into a blender with 3 cups of water. Blend on high speed for 2-3 minutes.

  3. Place your cheesecloth or hankercheif over a strainer and pour in the milk. Pull up the corners of the cloth and squeeze out all of the milk, you should have just over 3 cups.

  4. Pour into a jar and place in the fride, this will keep for up to a week.

Pistachio Milk Oats

  1. Place the oats, milk and salt in  a small saucepan over medium high heat. Cook stirring for about 5 minutes or until the oats have thickened and are creamy. 

  2. Remove from heat and stir in the honey. Pour into a bowl and top with sliced banana and strawberries or your choice of fruit. Serve and enjoy!

Recipe Notes

NOTE: Marc doesn't eat oats so I always make just enough for me buit this recipe is easily multiplied to serve 2 or 4.
