pina colada’s have been one of my favourite cocktails forever!! i’m pretty sure the first proper cocktail i had was a pina colada, not a great one it was made by my 17 year old best friend, but it didn’t matter i loved the combination of pineapple and coconut. i usually only have them once or twice a year i tend to favourite light fruity cocktails or an old fashioned (my go to cocktail).

not everyone is a fan, take my husband for example, he loves pineapple and coconut but not mixed together. however, for me the combination is perfection, fresh sweet slightly tart pineapple and creamy coconut, just so good!!

don’t they look so innocent and angelic?? never fear though these babies can pack a punch, because of the strong flavours you can really up the alcohol in these and you really can’t taste it, or make them without the alcohol entirely and they would still be amazing!

usually pina colada’s are made with coconut cream, i used coconut milk here which when blended gives them a airy frothy finish which makes these a little like drinking clouds. while a pina colada is not an everyday drink i do hope you will try this recipe out, and tell me are you a pina colada lover?

pina colada

Ingredients

  • 2 cups coconut milk, frozen in a ice cube tray
  • 300 grams fresh pineapple
  • 1 cup pineapple juice
  • 2/3 cup bacardi
  • 2 tablespoons vanilla syrup

Instructions

  1. cut the pineapple into wedges. preheat a griddle pan over high heat and grill the pineapple for 2-3 minutes on each side until golden.

  2. place all ingredients in a blender and blend on high speed until smooth and frothy

  3. pour into serving glasses, add pieces of pineapple, cherries, cute straws, whatever takes your fancy and enjoy!
