Coconut Waffles with Caramelised Pineapple

All week I look forward to our sunday breaksfasts. Sunday mornings always go at a different pace for us, sometimes we have a lot on sundays and sometimes our sundays are super chill, but no matter what we have going on we always take time to make something delicious for breakfast and sit down at the table together without our phones or anything to distract us and enjoy opur breakfast together.

This is something we have been doing for the past year and it makes a huge difference.

Banoffee Pie takes me back to my childhood. I can’t remember the first time I tried it, it’s one of my Mum’s favourites but we never had it often. It was a special occasion dessert.

Is there a particular dessert that reminds you fo your childhood or your family?

I love it more because its still something I still make for special occasions, I love the process.

This weekend we had planned to go to Movie World, but instead I ended up spending half of Saturday reading a book, then after lunch we went shopping. We made some cocktails and pumpkin and chorizo salad for dinner and had a movie night. Then on sunday Marc did some yard work, I cooked coconut waffles with caramelised pineapple for breakfast and made a banoffee split sunday afternoon then I had a bath.
