Whenever I think of comfort food I think of pasta. Often comfort food can take a long time to prepare, but I was after something quicker and with minimal washing up. Less washing up adds to the comfort right? So I came up with this one pot spinach mac n’ cheese.

Mac n’ cheese is something I ate a lot growing up. But it was always those packets from the supermarket, you know the ones where you add butter, milk and water and cook for 15 minutes. It’s super yellow but so good. Well it was so good, I can’t eat it anymore. Now I prefer to make my mac n’ cheese from scratch.

Making it from scratch means you can add extras, and let’s face it almost everything goes with cheese so the possibilities are endless!

For this one I simply added spinach, but you could add some artichokes as well and make a mac n’ cheese version of the oh so delicious spinach and artichoke dip. Next time I make this I am going add some chilli flakes to add some extra oomph!

When it comes to comfort food for me it’s hard to go past mac n’ cheese, it takes me back to my childhood, it’s packed with cheesy goodness and it’s delicious whats not to love? Well for me eating that much cheese too often is not a good thing.

So when I do have mac n’ cheese, I want it to be delicious and easy. This one fits the bill and my hubby loves it as there is only one pot to wash up!

One Pot Spinach Mac n' Cheese

Servings 6


  • 2 cups milk
  • 11/2 cups macaroni
  • 80 g spinach, chopped
  • 80 g grated cheddar cheese
  • 80 g grated vintage cheddar cheese
  • 50 g grated mozerella
  • 100 g mascarpone
  • 1/2 teas dijon mustard
  • pinch cayenne pepper
  • 1 teas salt


  1. Place the milk and macaroni in a saucepan over medium heat. Stir often to ensure the macaroni doesn't clump together, cooking until the macaroni is aldente.

  2. Add the chopped spinach and stir for 1-2 minutes or until the spinach is wilted. Remove from the heat.

  3. Add the cheeses, mascarpone, dijon, cayenne and salt, stir until smooth & creamy. Serve and enjoy!
