While I was grocery shopping I saw the cutest little capsicums and immediately wanted to make stuffed capsicums.
I should note that I have never made or eaten stuffed capsicums before, but I needed to make them.
So I brought 4 and figured I would come up with an idea.
Once I got home i asked Marc what he wanted to for dinner, he said nachos and it clicked!
I was going to make nacho stuffed capsicums.
I made my mince mixture the same way I would for normal nachos but then i scooped it into the capsicums, and baked them.
They turned out perfectly, the spicy mince mixture is complemented by the soft slightly sweet roasted capsicum and of course they aren’t nachos without cheese and corn chips.
I found these as easy to make as regular nachos and more interesting. Marc loved them, I think they would be a hit with kids or great for parties the capsicums make them they perfect single serve size.

Nacho Stuffed Capsicums
- 1 large red onion, diced
- 3 garlic cloves, crushed
- 1 tablespoon grapeseed oil
- 500g mince
- 4 small capsicums
- ½ teaspoon chilli powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon pepper
- 400g tin kidney beans, drained and rinsed
- 400g tin whole peeled tomatoes
- ½ cup grated cheese
Preheat the over to 180 degrees.
Cut the tops off the capsicum remove the stalks and dice up the capsicum tops. Place the capsicum bases in a tray that’s lined with baking paper.
Heat a medium frypan over medium high heat, add grapeseed oil and onion cook stirring until the onion is soft, add the garlic and stir until fragrant.
Add the mince 1/3 at a time, cooking until browned before you add more. Add the capsicum and cook until starting to soften.
Once the mince has cooked add the spices and cook stirring until well combined. Add the kidney beans and cook stirring for 5 minutes.
Add the tin of tomatoes and use your spoon to crush them up. Half fill the tin with water and add that to the pan, stir well and allow to simmer 10-15 or until thickened.
Spoon the mince mixture into the capsicums and place them into the oven, bake for 40 minutes.
Remove the capsicums from the oven and top with the cheese place them back into the oven for 15 minutes until the cheese is melted and golden.
Serve with corn chips and enjoy!
