This is a sandwich that Marc and I have all the time. We eat it anytime of the day, it’s easy to prepare and flexible enough to be breakfast, lunch or dinner.
And you can adapt it suit your tastes or what you have on hand.
I have made many different versions of this sandwich but this combination is what we always come back to.
It has everything you want in a good sandwich, crispy bacon, fresh crunchy lettuce, juice tomatoes, creamy avocado and cheese.
Also I always toast my bread in the pan I cooked the bacon in, thats right I put it right in the bacon fat and let it soak up all the goodness.
Fried eggs are amazing added to this, I love it as a breakfast sandwich because it has lettuce, tomato and avocado so that means its healthy right? Please say yes, I feel better about eating this rather than just an egg and bacon sandwich.
On a side note, Marc is home!! It was so great to see him when he got back. I always feel a little off when he’s away, do you know what I mean?
It’s so good to have him back, we had our Valentine’s Date last night. He recreated our first Valentine’s Day, we went to Vapiano for pasta and pizza, then onto fun house to play arcade games. It was simple and relaxing and so fun. You don’t need to go all out and spend a tonne of money to create a wonderful memory.
Makes: 2 sandwiches
- 4 rashers smoked bacon
- 1 tomato
- 6 cos lettuce leaves
- 1/2 and avocado
- 4 slices cheese
- 4 slices sourdough
Heat a griddle pan over high heat and add yo bacon, cook until crispy and remove from pan, let the fat drip back into the pan you want to keep all that for you bread.
While the bacon is cooking, cut the tomato in half, set each half face down and cut into slices. Scoop your avocado out of the skin and cut it into slices.
Once the bacon has cooked add you bread to the pan, try to get all slices coated in the bacon fat and cook until toasted and crispy.
Spread aioli onto the toast, top 2 slices with 3 lettuce leaves, fan out the tomato and place half on top of the lettuce, top with cheese, layer on the bacon, divide the avocado in half and fan it out the place it on top of the bacon and finally add the remaining bread.
