I made you one of my favourite meals to have for lunches during the week…
I made them with a spicy sauce this time and these are my new favourite, for maybe the next two weeks until i make them differently….
I also packed the meatballs with herbs fresh picked from my garden! I am so proud that i have successfully grown my own herbs.
See… packed with herbs = flavour bomb!!
Then cooked in rich spicy sauce, so so good.
Meatballs in Spicy Tomato Sauce
500g beef mince
1/2 cup bread crumbs
1/2 cup mixed herbs (i used thyme, basil, garlic chives and parsley)
1/4 cup tomato sauce
Salt and pepper
Spicy Tomato Sauce
1 red onion, diced
3 garlic cloves, crushed
2 jalepenos, finely chopped
1/2 cup red wine
400g tinned tomatoes
1/2 yellow capsicum, diced
I a bowl mix the mince, bread crumbs, herbs, sauce and salt and pepper well.
Divide into quarters, then divide into quarters again. Roll each piece into a ball, giving you 16 meatballs.
Set aside while you start the sauce.
Place a frypan over medium heat, add 1 tablespoon of oil and add the onion, cook until lightly golden then add the garlic and jalepeno, stir until fragrant.
Pour in the red wine and simmer for 5 minutes, then add the tinned tomatoes.
Mix well and bring to a simmer, add the meatballs to the pan.
Cook the meatballs halfway then flip over and add the capsicum.continue to cook the meatballs for another 7 minutes.
Mix gently to distribute the capsicum.
Serve over pasta or brown rice, with fresh grated parmesan.
