How often are you running late in the mornings? For me it happens 2 or 3 times a week. We get up walk the dogs, shower and get dressed and suddenly i have no time to make the scrambled eggs i was planning on. But i need a good breakfast.

If i don’t have a good breakfast vending machine here i come, and i hate that, i don’t want to be eating chips for breakfast. So i started making this smoothie, it’s super simple, it only has 6 ingredients and keeps me full until lunch.

I like having a got to breakfast that keeps me full and is healthy! I try to eat healthy breakfasts 6 days a week, sundays are our day to eat breakfast together so it could be anything pancakes, waffles, bacon & eggs, brunch dates.

I find that if i start the day of eating well its easy for me to continue making good food choices and say no to the sugary snacks that are always around in offices. Don’t get me wrong, i’m a baker so sometimes i’m the one providing those sugary snacks, but now i only have 1¬†instead of 2¬†or sometimes when no one is watching 3 or 4.

I love this smoothie because it tastes decadent, i make it very thick so you could eat it with a spoon, ohh maybe i should use it for a smoothie bowl!!! Smoothie bowls are my new obsession, thanks instagram…


If you are like me and need a quick go to breakfast for those mornings please try this. Keep frozen blueberries and peeled frozen bananas in the freezer and some soaked oats and chai seeds in the fridge (Note you can keep the soaked oats and chia seeds for up to 3 days in the fridge) and you can blend this up for a quick last minute breakfast, even pour it into a cup or bottle that you can take with you.

I frequently take this with me and drink it while i am in the train to work. I see so many people now with smoothies on the train, it’s such an easy way to get a good breakfast in, especially if you have a long train ride.

I have a 30 minute train ride it doesn’t sound like long but being able to have my breakfast on the gives me back 10 minutes while i am at home in the morning, which for me makes a huge difference.

I hope you try this and let me know what you think. Would you trade out the blueberries for other fruit? I bet it would be great with strawberries or raspberries. Oh now i’m thinking about smoothie bowls again….

Liquid Breakfast Smoothie

Serves: 1


  • 3 tablespoons oats
  • 1 tablespoon chia seeds
  • 1/2 cup milk
  • 3/4 cup frozen blueberries
  • 1 frozen banana
  • 1 teaspoon honey
  • 1/4 cup milk



Place the oats, chia seeds and 1/2 cup milk in a container stir well and place inthe fridge over night or up to 3 days.

Place the oat and chia mix in a blender, add the blueberries, banana, honey and extra 1/4 cup milk. Blend until smooth.

Note if you don’t want it super thick add more milk.

Pour into a glass and enjoy!
