Today I am bringing you my current favourite spring beverage, lemon & ginger soda! It’s quick and easy to make and oh so refreshing on the hot Brisbane spring days.

This may be the easiest drink I have made for you yet! It’s just a simple sugar syrup and soda water.

You know I love simple and when it results in a drink like this one how could you not love it?

If your not into soda, or just don’t like bubbly drinks I hear you they aren’t always for me you could use plain water here instead of sparkling, just make sure the water you use is COLD! Really cold! Or load your glass up with ice!

The flavour comes from fresh ginger and a lemon. The ginger is a little spicy but not overpowering and the lemon is super refreshing, sometimes i add an extra squeeze of fresh lemon juice into my glass as well just for an extra lift.

And the best part? This syrup keeps fro around 3 weeks in the fridge, I beat it would be great in cocktails as well!!

Aaahh, they just scream spring! I love spring. It’s my favourite time of year. Warm weather but not super hot, rain but not the insane summer storms we get here in Brisbane.

I am really not a fan of cold weather but I also don’t love stinking hot summers. Now don’t get me wrong I would take summer over winter any day, but spring is my favourite. Plus there is all the flowers and fresh new growth on the trees and baby animals. It’s just a magic time.

Lemon & Ginger Soda

Servings 250 ml

Ingredients

  • 1 cup sugar
  • 1 cup water
  • 40 g ginger, peeled & sliced
  • rind off one lemon
  • 1/4 cup lemon juice

Instructions

  1. Place the sugar, water, ginger and lemon rind in a small saucepan over medium heat and cook stirring constantly until the sugar dissolves.

  2. Once the sugar has dissolves bring to a simmer and cook for 5 minutes. Remove from the heat and add the lemon juice, stir and allow to cool to room temperature.

  3. Pour into a bottle and store in the fridge.

  4. To make sodas: Mix 1 part lemon & ginger soda to 4 parts sparkling water. Add lots of ice and lemon slices, enjoy!
