happy sunday!!!! i love sundays, but i’m sure you already know that. today’s brunch is an old favourite and my go to when we don’t have a lot of time for brunching. it’s the jimmy special, which is just scrambled eggs & avocado on toast.

before i moved to brisbane i lived in armidale in northern tablelands of new south wales (it gets so cold there!) anyway there was a cafe that i used to go to almost every weekend with friends and for breakfast you could order jimmy special. it was aptly named after one of my friends, because we frequented the cafe so often and jimmy always order scrambled eggs and avocado on toast they put it on the menu and named it after him.

however it wasn’t on the printed menu, it was a secret dish, kinda like some of the ones on man vs. food. you had to know about it to get it. it was like having our own secret club.

this brunch is simple and you can make it in less than 15 minutes but don’t be fooled it is an incredible brunch. while this is my go to when i am time poor on a sunday it is also my favourite to add to a brunch menu. it’s the perfect size to incorporate into a menu with pancakes or waffles and has browns and fruit and depending on how your feeling coffee, smoothies or cocktails or all of the above.

it’s great if you know you are going to be having a big lunch as well.

today we have friends coming over to watch the pacquiao vs horn fight and Marc has fired up the webber for smoked pork ribs for lunch. i’m making a cherry bbq sauce and chili roasted potatoes from i am a food blog to go with the ribs. along with some easy cocktails for us girls – i will be sharing the cocktail soon!

if you are into breakfast for dinner, please say you are this is perfect for weeknights when you don’t have a lot of time or are late home from work. in these instances i often add bacon or cherry tomatoes to make it a bit more hearty.

i made my scrambled eggs the same way eggslut makes them fro their fairfax burger – you can check out a video here to see what i mean

jimmy special - scrambled eggs & avocado on toast

Servings 2 people

Ingredients

  • 3 eggs
  • 30 grams butter
  • 1/2 teaspooon salt
  • 1/2 teaspoon pepper
  • 1/2 avocado, sliced
  • 2 slices sourdough toast

Instructions

  1. crack the eggs into a bowl and whisk with a fork, you just want to break up the yolks, pour them into a cold non stick fry pan and add the cold butter. 

  2. cook the eggs, over medium-high heat, stirring constantly and moving on and off the heat, until the eggs start to set. remove from the heat.

  3. place the slices of toast on plates, top with 1/4 sliced avocado fanned over the toast and split the scrambled eggs between the two plates, serve and enjoy!
