There was lots of coffee this week.

I never would have made it through this week without it. I became obsessed with Oatmeal Latte’s from the gorgeous Jess over at How Sweet Eats.

I also made this incredible Honey Bourbon Vanilla syrup… just look at those vanilla seeds, so decadent.

I had to make iced coffee as soon as the syrup was cold. I like my iced coffee strong and sweet.

Then I told my husband about the syrup and he suggested a frappe, so naturally iI had to make that too.

I loaded the blender with 4 handfuls of ice, 5 scoops of vanilla ice cream, 4 shots of coffee, milk and of course my honey bourbon vanilla syrup.

It was dreamy.

Iced Coffee with Honey Bourbon Vanilla Syrup

Serves: 2 (easily multiplied)

Ingredients

4 shots of espresso

Milk

Honey Bourbon Vanilla Syrup

1 cup Raw Sugar

1/2 cup Honey Bourbon

1/4 cup water

1/2 tablespoon Vanilla Bean Paste

Method

Iced Coffee

In a glass place a handful of ice, pour in 1/2 tablespoon syrup, add 2 shots of espresso and fill with milk.

Coffee Frappe

In a blender add 4 handfuls of ice, 5 scoops of vanilla icecream, 4 shots of espresso, 1 tablespoon syrup and 2 cups milk.

Blend until ice has broken down, pour into 2 glasses and enjoy.

Honey Bourbon Vanilla Syrup

Place sugar, bourbon and water in a small saucepan . Bring to the boil, simmer for 2-3 minutes. 

Remove from heat, stir in Vanilla, allow to cool and pour into a bottle.
