How is it Monday already? The weekends are over in a flash for me lately. How was your weekend? Are you ready for this week? I’m not sure I am, but things have gotta get done so I’m gonna do my best. Today I want to talk to you about fries, I love fries. They are my side of choice, it’s rare for me to turn them down. A while ago we went out for lunch and on the menu was fries with oregano and feta, I had to try them, I mean fries and feta?? How was this real life? You guys they were amazing!! So obviously I needed to recreate them.
These fries are everything I want in a good side. The fries are crispy and salty, the oregano brings a lemony vibrance and the creamy feta, oh the feta just brings everything together. I could eat a whole bowl of these to myself no need for anything else. But they would be a great side for any meal and will be on my next dinner party menu.
I oven baked my fries, it really is straight forward to get crispy oven baked fries. The key is n soaking the potatoes before you cook them. Then coating them in oil and tossing every 10-15 minutes while cooking. The extra effort is so worth it I promise.
Oregano and feta is a perfect combination, and they lift are run of the mill side into something special and unexpected. Some chilli would be fantastic on these as well, just to add a nice kick. Don’t you just want to dive into that bowl?? I sure do! I hope you love these as much as I do!
Crispy Fries with Oregano & Feta
- 500 grams potatoes
- 2 tablespoons oil
- 1 teaspoon salt
- 60 grams danish feta
- 2 tablespoons fresh oregano
Wash the potatoes, leave the skins on and cut into 1 cm fries. Place the fries into a bowl and cover with water. Set aside to soak for 30-45 minutes.
Preheat the oven to 200 degrees.
Drain the fries and dry well on paper towel. Dry the bowl and place the fries back in the bowl with the oil and salt. Toss well to coat the fries in the oil.
Oil two trays and divide the fries between the trays, don't pack them to tightly or they won't get crispy.
Place the trays into the oven and cook for 35-45 minutes, tossing every 10 -15 minutes.
Once the fries are cooked, place them into a serving bowl, finely chop the oregano and sprinkle over. Then crumble the feta over the top. Serve and enjoy!
