i’ve been thinking about making savoury pancakes for a while now, toying with different flavours and how they might work. i finally settled on a combination that i thought would be great and set about testing it, and now i bring you my perfected cornbread pancakes with smoky bacon, creamy avocado and tomato sauce.

if you’ve been with me from the start you would know that i have an affinity for pancakes. they are my very favourite breakfast and i always make myself pancakes for my birthday. this means i have made a tonne of different variations on pancakes but i have never made savoury pancakes until now.

well that’s all changing now, these pancakes are amazing. and they have me thinking about what other savoury combinations i can make, i’m thinking next will be savoury sweet potato pancakes.

look at that parmesan shower, all meals should be showered in something delicious – parmesan, icing sugar, pomegranate seeds, fresh herbs something to add a lift and make everything look extra special. i believe pretty food tastes better, Marc however thinks it tastes the same no matter how it looks.

these pancakes are soft and yielding, topped with fresh slightly sweet tomato sauce the bacon brings much need crispiness and avocado pairs beautifully with these flavours. also everyone loves avocado right? tell me you are an avocado fan, i had to convince Marc but he’s really come around recently. i just loved the creaminess of a good avocado.

cornbread pancakes, with bacon, avocado & tomato sauce

Servings 4


  • 1 cup cornmeal
  • 1 cup self raising flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 60 grams melted butter
  • 2 eggs
  • 1 & 1/4 cups milk
  • 4 rashers bacon
  • 1 avocado
  • parmesan cheese

tomato sauce

  • 1 kilo tomatoes, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons basil
  • 1/2 teaspoon garlic granules
  • 2 tablespoons balsamic vinegar


  1. preheat a fry pan over medium heat.

  2. combine the cornmeal, flour, salt and pepper in a large bowl and mix well. in a separate bowl mix the melted butter, eggs and milk. 

  3. pour the wet ingredients into the dry and mix until smooth.

  4. Pour 1 tablespoon of oil into the fry pan and then pour spoonfuls of the pancake batter in and cook for 2-3 minutes or until bubbles start to form flip and cook for a further 1-2 minutes. repeat until all batter is cooked.

  5. cook the bacon until crispy and slice the avocado. 

  6. serve the pancakes with the tomato sauce, bacon and avocado and enjoy!

tomato sauce

  1. place all ingredients in a medium saucepan over medium heat. cook stirring occasionally for 15-20 minutes, or until the tomatoes start to break down.

  2. once the tomatoes have broken down, reduce the heat to low and keep the sauce warm while you prepare the pancakes.
