Recently I became kind of,ok ok, really obsessed with Oatmeal Lattes from How Sweet Eats.
They are the perfect breakfast/coffee fix for when you are short on time in the morning or for when you need an afternoon pick me up.
But as I live in Brisbane and it’s the start of summer and mid heat wave, iI decided it was time to come up with a cold version.
Enter Coffee Overnight Oats, they are basically the same thing, you make your oats then pour in a shot.. or two… of coffee and dig in.
They are so good, think iced coffee mixed with overnight oats.
Quick to put together, pre made breakfast for rushed mornings with coffee included in one convenient breakfast. Exactly what’s needed on a hot summer morning!!
Coffee Overnight Oats
1 cup rolled oats
4 tablespoons chia seeds
2 cups milk
2 tablespoons vanilla bourbon syrup
In a bowl mix oats, chia seeds and a pinch of salt.
Add the milk and syrup, mix well. Divide between 2 mason jars, screw on the lids and place in the fridge overnight.
When ready to eat pour an espresso shot, or 2 depending how strong you like your coffee and pour over the oats, gently mix.
