happy sunday!! let’s brunch on these cherry & orange breakfast parfaits together!!
real talk – these are just yogurt, granola and fruit layered together in a pretty glass but calling them a parfait is way fancier and will help you impress your friends. these really are super simple to make, make the granola a day or two in advance and you can whip these up in under 10 minutes, perfect for when family comes over unannounced or you need to feed a group but are looking for minimal effort! i put together a gif so you can see just how easy making these really is.
see super simple! the fruit is easy, pit some cherries and cut them in half, i segmented the oranges but you can cut them up however you want, some greek yogurt with vanilla bean and some fresh thyme leaves mixed in and stove-top granola!! oh yes i said stove-top. i first saw granola made this way here i made it, i loved it and i was amazed at how easy it was! so i decided to make my own version!
i loved this parfait, it is packed with flavour i love! the thyme pairs so well with the cherries and oranges and add a unique flavour note that is unexpected but delightful! you have to make this and then tell me what you think!

cherry & orange breakfast parfait
- 2 cups greek yougurt
- 2 teaspoons fresh thyme leaves, finely chopped
- 2 teaspoons vanilla bean paste
- 2-3 oranges, segmented
- 30 cherries, pitted & cut in half
- 2 tablespoon coconut oil
- 1 cup oats
- 1/2 cup chopped walnuts
- 2 tablespoon chia seeds
- 2 tablespoons honey
- 2 tablespoons maple syrup
- 2 teaspoons salt
- 1/2 teaspoon ginger powder
place the yogurt, thyme and vanilla in a bowl and mix well to combine.
place some granola in the base of the serving glasses or bowls you are using. then place 2-3 teaspoons of yogurt into each. Then add 1/4 of the orange segments to each,top with more yogurt. divide the cherries between the glasses or bowls, top with the remaining yogurt and more granola. serve and enjoy!
place the coconut oil in a large fry pan over medium heat and heat until melted.
add the oats, nuts & chia seeds to the fry pan & cook stirring occasionally until toasty and golden.
add the honey, maple syrup, salt and ginger cook stirring constantly until the oats are fully coated and the mixture comes together.
tip the mixture onto baking paper and set aside until fully cool then break up into chunks. store in an airtight container for up to 2 weeks.
