To celebrate christmas I wanted to make a cocktail that would encompass flavours that remind me a of christmas.

We’ve always had cherries for christmas, my mum and I both love cherries and here in Aus christmas is the best time of year for cherries. So I decided to make cherry infused bourbon.

Just look at the colour of it, it looks christmassy already.

Once I had the infused bourbon I started thinking about what kind of cocktail I wanted to make.

I love old fashioned’s they are so good and so easy to make exactly what I want in a cocktail this time of year.  I used the infused bourbon and cherry bitters (I used the recipe from How Sweet Eats to make my cherry bitters). Then when I went to grab an orange I realised we didn’t have any so I used lime instead this turned out to be the perfect addition.

This cocktail is sweet but so well balanced, it would be the perfect christmas eve cocktail.

Cherry Infused Bourbon

Place sugar, bitters and bourbon in a glass, stir until sugar is dissolved.

Cherry Infused Bourbon

Place the pitted cherries in a jar, pour in the bourbon. Put the lid on the jar, give it a good shake and place in a dark place.

Shake the jar daily and taste each day. I let mine infuse for a week because i wanted a strong cherry flavour.

When you are happy with the flavour, strain the bourbon off the cherries and into a clean bottle.
