hi friends!! so monday, how did we get here again already? last week flashed past! monday nights dinners should be easy right? i agree! so i’m bringing you a super simple sausage tray bake, simply toss the vegetables with some oil and seasoning and tip everything into a tray and whack it in the oven. easy!
let me tell you about my favourite kind of food.
it’s food that brings people together. there is little i enjoy more in life than cooking food that people love, that brings them together and makes them happy.
i hate the cold weather, if there’s no snow there is no reason for it to be cold. is that just me? i moved from northern new south wales where it would get incredibly cold in winter to Brisbane. when i moved it was a spur of the moment decision, i was walking to the pub with my boyfriend at the time and we had been talking about moving for a couple of months, and he said what about Brisbane? i said yes, and 2 weeks later we moved.
Have you ever invited friends over for dinner and then a day or 2 before they arrive gone into panic over what you are going to cook them? That happens to me all the time, anxiety sucks! But recently when it happened I went with my gut and made this beef & red wine pie. It was a huge hit!
The best part about this is while it looks fancy it is so simple!
While I was grocery shopping I saw the cutest little capsicums and immediately wanted to make stuffed capsicums.
I should note that I have never made or eaten stuffed capsicums before, but I needed to make them.
So I brought 4 and figured I would come up with an idea.
