One of Marc’s favourite meals is carbonara so I wanted to share my recipe with you, so that you can make it and share it with your loved ones this valentines day.

My recipe doesn’t contain any secret ingredients, just what I use everytime i make it.

I should mention that I have never read or used a recipe to make carbonara, I think I saw someone make it TV once and decided to make it after that, but whether I remember the ingredients or the steps correctly never mattered we loved the way it turned out so I have always made it the same way.

I know that my recipe is different to most as mine contains onions but I love the extra flavour they add to this pasta.

We don’t eat this often, I mean lets face carbonara is not exactly a health food, but for special occasions this is one of my go to’s.

I hope you try my version and please let me know what you think. I would also love to know how you make carbonara? Do you add other ingredients? I know some people add chicken or mushrooms.

  • 160g fettucine
  • 20g butter
  • 1 medium onion, finely diced
  • 2 garlic cloves, crushed
  • 4 rashers streaky bacon, diced
  • ½ cup white wine
  • 1 cup grated cheddar cheese
  • 1 tablespoon chives
  • 1 tablespoon parsley
  • 1 egg


Heat a saucepan of water over high heat, add a pinch of salt. Once the water starts boiling add the fettucine.

Heat the butter over medium heat until melted, add the onion and sauté until translucent, add the bacon and increase heat to high and cook until browned. Add the garlic and wine and cook until almost all the wine has evaporated.

Once the wine has evaporated reduce the heat to low and add the cream mix through, add the cheese and herbs and stir well. Once the pasta is al dente add the egg to the sauce mix well add the pasta and toss through the sauce well. You may need to add a little pasta water to loosen the sauce if needed. Serve and enjoy!
