Here we are at the start of a new week, with a new recipe that I am SO SO excited to share with you!!! Seriously guys this bull dust chicken & greens sandwich is freaking amazing!! I’ve eaten it 4 times in the last week!

I made this sandwich at the spur of the moment for Marc and I. After thinking about what kind of recipes i’d like to make with Wyld Smoke Rubs I wanted to try coating some chicken in the rub and just cooking it in the fry pan to see how it would turn out. The answer…. unbelievably good!

The bull dust rub is so packed with flavour that i didn’t use any other seasoning at all on this sandwich, and the flavour really stands up to being loaded into a sandwich packed with greens.

As soon as I took one bite of this sandwich I knew I had to share with you!

I know some of you may have been expecting to see barbecue recipes with these rubs, and I will share some. I really like to take ingredients and use them in a different way to most. These rubs were designed for bbq, mostly low and slow so I want to showcase we else you can do with them. I even have plans for a dessert using one of them.

So let’s break down this sandwich.

We’ve got:

  • Light Rye toast
  • Mayonaise
  • Baby Spinach
  • Alfalfa Sprouts
  • Sliced Avocado
  • Bull Dust Chicken Thigh
  • Swiss Cheese

That’s it, simple, delicious and healthy-ish.

Bull Dust Chicken & Greens Sandwich

Servings 2 Sandwiches


  • 2 skinless chicken thighs
  • 1 - 2 tablespoons bull dust rub
  • 1 handful baby spinach
  • 20 grams alfalfa sprouts
  • 2-4 slices swiss cheese
  • 3 tablespoons mayonnaise
  • 4 slices light rye bread, toasted
  • 1/2 avocado, sliced


  1. Preheat a fry pan over medium heat. Coat the chicken liberally in the rub. Place the chicken into the pan to cook, cook for 10-15 minutes until cooked through. The rub will blacken - this is good!

  2. Spread the mayonnaise onto the toast, top with spinach, sprouts, avocado then the chicken. Add the cheese onto top of the chicken and top with the other slice of toast. Serve and enjoy!
