Happy Friday! I still cannot believe we are officially land owners! It’s just crazy!! Anywho… let’s talk about these blueberry, nectarine & lavender italian cream soda’s
I had my first italian cream soda a few weeks ago and it changed my life! No really. It was amazing and I knew i had to recreate my own version of it!
Since I am obsessing over how good the nectarine’s and blueberries are at the moment they were the obvious choice, and i adored the addition of lavender in the sangria I made a few weeks ago so I added lavender here as well.
Even though this uses the same flavours as the sangria it is completely different, and not just because of the lack of booze.
The flavours combine differently and with the cream this turns into a luscious dreamy drink that is 100% celebration worthy.
I placed one of these in front of my husband and he looked at it like it had eye balls floating in it, and immediately asked what is that? and do I have to drink it? I explained that it was a blueberry, nectarine & lavender italian soda and if you don’t like it no you don’t have to drink it. Well he stirred it up, took one sip and said this is delicious you’re not getting mine. Ha!

Blueberry, Nectarine & Lavender Italian Cream Soda
- 60 g fresh blueberries
- 150 g nectarine s
- 2 tsp dried culinary lavender
- 1/4 cup sugar
- 1/2 cup water
- soda water
Place the blueberries, nectarine, lavender, sugar and water in a sauce pan over high heat and bring to the boil, stirring constantly. Reduce heat to medium and simmer until liquid is reduced by half.
Puree with a stick blender and strain through a fine sieve. You should have about 3/4 cup of puree. Allow to cool.
Divide the puree between two glasses, it will be very thick. Add a handful of ice to each glass, add soda water to about 1.5 cm from the top.
Add a tablespoon of cream to each glass, add a straw give it a quick swirl and serve.
Half the fun of this drink is mixing everything together, because the puree is thick it takes a bit but it is oh so worth it!
