I hated baked beans until last year, Mum used eat tinned baked beans on toast all the time and I hated the idea of it. They smelt bad and I just didn’t like the idea of them.
The one time Mum got me to eat them, they tasted like nothing.
And then I brought Save with Jamie (side note Jamie Oliver is my idol!!) and there was a recipe for BBQ baked beans with roasted sweet potatoes.
I knew this was a recipe I wanted to try, i love sweet potatoes and I was willing to give homemade baked beans a shot.
That recipe was life changing!! Home made baked beans are one of my favourite breakfast foods that I eat for breakfast, lunch or dinner.
Please try these, especially if you never like tinned baked beans. Homemade baked beans are incredible. They have so much flavour!!
They are so versatile, eat them with toast, as a part of a big breakfast or brunch with friends, with roasted sweet potatoes, sausages or steak for dinner.
They are also amazing in toasted sandwiches, baked beans and cheese toasted sandwiches are so so good!
Spicy Baked Beans
Serves: 2 – 4
1 brown onion, diced
2 garlic cloves, crushed
½ teaspoon cumin
1 teaspoon paprika
¼ teaspoon chilli
400g tin whole tomatoes
¼ cup barbecue sauce
400g mixed beans
Preheat the oven to 180 degrees.
Heat a medium saucepan over medium high heat and ass 1 tablespoon of oil, add the onion and garlic and cook 2-3 minutes or until translucent. Add the spices and cook until aromatic.
Add the tin of tomatoes and use your spoon to chop up the whole tomatoes, half fill the tim with water and tip into the saucepan, then add the barbecue sauce. Once the sauce starts to bubble add the beans and mix through.
Pour the beans and sauce into a baking dish and place in the oven for 40 minutes.
Allow to cool for 10 minutes before serving. Enjoy!
