With Australia Day coming up i wanted to make you a cocktail that would be fresh and vibrant and made with all australian products.

As i live in Brisbane I wanted something that would be refreshing as i know it’s going to be crazy hot on Australia day, it always is. So I did an Aussie twist on a Moscow Mule.

Introducing the Aussie Mule…

This cocktail is made with Bundaberg spiced rum, the best ginger beer – Bundaberg ginger beer, limes and pineapple juice.

The flavours work so well together, the pineapple juice adds at touch of sweetness without being too sweet, you get a little spice from the rum and ginger beer and the ime cuts through and add a fresh zing.

Perfect for Australia Day and so quick to whip up, perfect for parties.

Aussie Mule

Serves: 1 easily multiplied

Ingredients

3 Lime wedges
60ml Bundaberg Spiced Rum
120ml Pineapple Juice
150ml Bundaberg Ginger Beer

Method

Place the lime wedges into a glass and using a muddler, muddle them to press out some of the juice.
Add a handful of ice, pour in the spiced rum and pineapple juice.
Give it a quick stir and top with ginger beer.
Enjoy!
