OMG you guys! I have been dying to tell you about these apple & cinnamon chai crumble muffins!
The chai crumble is life! It’s insanely good, crispy and crunchy and packed with flavour!
How do you make apple & cinnamon muffins better? You top them with chai crumble.
Seriously all muffins should be topped with something crispy and crunchy. It adds so much texture, I love texture! Soft cakey brownies, chunks of fruit and crunchy topping = heaven!
It’s been raining here on and off since Saturday so all I want to do is curl up with a cup of tea and one of these apple cinnamon chai crumble muffins. That sounds like perfection.
I love rainy days, the are the best days for baking, reading, curling up with your loved one and watching movies or even building pillow forts! They are the ideal days for baking these muffins in the morning and spending the rest of the day curled up with a good book or a movie and maybe even ordering takeaway for dinner.
Go on have a really chilled day you deserve it!
But make sure you make these muffins! If you make them and take them to work you will be the most popular person in the office. I promise!
I am planning on making these for Christmas, they will be part of our breakfast spread. Who doesn’t love a muffin for breakfast, or anytime really? These keep well in the fridge for a week, just pop them in the microwave for 30 seconds before you eat them so they would be great for boxing day leftovers. But the best kind of leftovers because they don’t taste like leftovers, you know what I mean?
Like I can’t just have leftover ham on boxing day, i need to make something with it that tastes different to how i ate it during Christmas lunch. Sometimes that means a ham, cheese, mustard and honey sandwich, sometimes I fry some ham and make ham and egg rolls. Just something a little different.

Apple & Cinnamon Chai Crumble Muffins
- 1/3 cup firmly packed brown sugar
- 1 teas cinnamon
- 1 teas ground ginger
- 1 teas ground nutmeg
- 1/2 teas ground star anise
- 2/3 cup plain flour
- 60 g butter, melted
Apple & Cinnamon Muffins
- 2 cups self raising flour
- 2 teas cinnamon
- 2/3 cup firmly packed brown sugar
- 2 granny smith apples, peeled and cut into a 1 cm dice
- 125 g butter, melted and cooled
- 2 eggs
- 3/4 cup buttermilk
Place the sugar, spices and flour in a bowl and mix well. Pour in the butter and mix until it resembles bread crumbs. Set aside.
Apple & Cinnamon Muffins
Preheat the oven to 200 degrees celcius. Place 18 muffin liners into muffin trays.
Place the flour, cinnamon and sugar in a bowl and mix well. Add the diced apples and mix until well combined.
Whisk together the butter, eggs and milk until well combined.
Add the milk mixture to the dry ingredients and stir with a large spoon until just combined. If you over mix the batter the muffins will be tough.
Spoon the mixture evenly between the muffin cases. Top with chai crumble then bake for 20 minutes or until golden.
Remove from oven and stand for 2-3 minutes before removing the muffins from the tin to a cooling rack.
